Understanding Escherichia Coli (E. coli) Training - Preventing Food Contamination

E. coli bacteria live in the intestines of healthy people and animals, without causing the host any adverse effects or illness. Most strains of E. coli, if ingested, are harmless or at worst cause very mild symptoms but there are a few strains which will cause severe illness, notably E. coli O157 whose bacteria, will cause a dangerous form of gastroenteritis.

This strain can cause severe abdominal cramps, bloody diarrhoea, vomiting and in the case of people in “at risk” groups i.e. the very young, elderly people and those with immune deficiencies, it can cause death. There have been a number of outbreaks of E. coli in recent years, many of which have been severe and have hit international headlines.

The implications of an outbreak of E. coli O157 are very damaging to any company. This could

  • lead to financial losses and even the loss of the business
  • lead to loss of reputation and sales
  • lead to staff redundancies
  • all this is apart from the horrific nature of the illness and the threat to wellbeing and life.
